It works people!!!


For those of you following my low-carb recipes lately, I just wanted to encourage anyone who is thinking about dieting to jump on the low-carb train.  I get to eat foods that I love (bacon, eggs, meat, chicken, heavy cream...) but here's the best part:
I've been on the diet for 6 days and I've lost
5 POUNDS!!!
For someone my size (5'0") 5 pounds is a lot. Especially the stubborn five pounds that just hands around your belly. Gross.  I haven't been this small since before I had my daughter.

Low Carb Peanut Butter Cookies

Here's another great one:

LOW CARB PEANUT BUTTER COOKIES

1 cup natural or low carb peanut butter 
1 cup splenda 
1 tsp. vanilla 
1 egg.

Mix the ingredients together and form into balls. Place on a cookie sheet preferably with parchment paper. Press balls down with a fork. Bake cookies at 350 degrees for 8 to 10 minutes. Let cool for 1 minute.

They are crumbly, but that just means you'll have to lick your hand to get the last tasty morsels off when you're done.

New Diet. New Perspective. And Low Carb Pizza.


In an attempt to remedy some health concerns, I started the Atkins diet this week.  I am currently on Day 4 and have lost 3 pounds already!  I'm not really doing it to lose weight, but it is certainly a huge bonus, especially now that swimsuit season is upon us.  
First let me say I despise, no...loathe.  No....there's just not a word strong enough for what I think about dieting. I have no willpower.  I love food. I don't really discriminate, I love all kinds of food. But *sigh* I want to be healthy more.
So, I've been a little headachy...and a little grumpy as I adjust to the new grub. But along the way, I've found out that I can have some really amazing food on this diet!  I'm so excited, in fact, that I'm gonna start posting some great low-carb recipes on here just in case they can help anyone else who wants to jump on the low carb train.  
I realize that I've only been on the diet for 4 days, but I can tell you that I already feel better.  I have more energy, my head is clearer, and I'm less hungry. A typical day at the office involves my stomach growling around 10am.  Yesterday, 1pm rolled around and I hadn't even noticed because I just wasnt hungry.  Awesome.
So here's a recipe for some low-carb pizza, that I must tell you... is my new favorite.  It tastes like an amazing thin crust pizza...sooo good!!  And one of the best parts is that you can have ranch dressing to dip it in!  

Take 1 Flat-Out low carb wrap (found mine at SuperTarget)
top with shredded cheese
then diced tomatoes 
and red onions
then sprinkled with fresh basil
then top with turkey pepperoni.  
drizzle a little olive oil on top,
then some italian or pizza seasoning and
pop it in the oven at 425 for 10 minutes or until edges get a little brown.
Top with Parmesan Cheese.

Ahh mazing.

An Unexpected Education


*Warning: slight language and anatomy discussion ahead. Proceed with caution.

A few weeks ago, we took our little girl to a really cool zoo where you get to pet all kinds of cool exotic animals. She had the chance to pet (and then fall in love with) a kangaroo named Jackson.  Okay, well....it was me who fell in love with him.  Anyway, tonight while flipping through the channels, I came across a documentary about kangaroos.  So baby girl watched it with me and we talked about Jackson and how cool the 'Roos are.  All of a sudden, a diagram popped up on screen- to which she replied "Whats that?"  
Before I could answer or reach for the remote, the monotone Voiceover guy blared "Females have two vaginas."
"Oh, mommy, that's a Ba-jina!"
I'm furiously pressing buttons on the remote hoping to erase that too-early lesson from her brain.  And now I'm just hoping that word never creeps into conversation again.  Or at least for a few more years.

Make Your Own Hand Sanitizer

I don't know about your area, but stores are sold out of hand sanitizers in my town due to the public panic over Swine Flu.  Also gone from store shelves are the disposable face masks.  While it seems these would be effective, in fact all they do is protect others from catching what you've got and they are often loose-fitting and most likely won't protect the wearer from inhaling small particles.  
Hand washing is essential.  Do it often. And for a minimum of 20-30 seconds.  If you're on the go, bring along an alcohol-based hand sanitizer.  If you can't find any in stores anymore, make your own. This one includes an ingredient (tea tree oil) that has antibacterial AND antiviral properties.
