New Low Carb Recipe- Turkey Meatballs

Okay, girls, get this. 
So I'm shopping yesterday and see this cute pair of orange madras shorts, so I grab them and take them to the dressing room. They fit like a dream.  Just for kicks and giggles, I turn around and grab the tag to see what size they are....  size two.  Excuse me?
SIZE 2!  
WTC!? 
(that's "what the crap" for those of us who despise the F word).  
The last pair of pants I bought were a size 7.  Now before you guys go all "what do you need to lose weight for?"  Remember this.  I'm 5 foot tall.  5 foot nothing.
So, I'm  trying to recruit more people to try this low carb wonderland with me.  I can't tell you how excited I am about  being skinny again.  

Okay, thanks for letting me rant.  Back to business.  Here's something we made this week that was deeelish.  Turkey Meatballs.


TURKEY MEATBALLS

Ingredients 

1 pound raw ground turkey

1 medium egg

2 tsp crushed garlic

1/2 cup parsley

 Directions 

In large fry pan on stove top, boil 1-1/2 inches of water.

Break egg up with a fork in a mixing bowl.

Add turkey, garlic and parsley. You can also mix in  green onions, red onions, chopped mushrooms, and your choice of spices. Mix well with hands. Make tsp size meat balls.

Gently drop meatballs into boiling water and boil for 5 minutes.

Discard water.

You can place meatballs into your favorite sauce or soup broth or let cool and freeze in baggies.

Makes approximately 30 meatballs.


Turkey meat is a great lean kind of protein, but this method makes it even better.  As you boil the meat, you can see the fat cook out and it just all ends up in the water.  

You can dip these in whatever you want, but if I may make a suggestion...

SoyVay Teriyaki Sauce will change your life.  This stuff is heavenly.
